Hey guys! I’ve been sick the past couple days but I finally was able to put the Vick’s and tissues down long enough to post this recipe I made on Sunday night. This is a recipe that my mom originally gave me a few years ago and I tweaked it to work perfect for me! Shane loves this recipe too and it’s actually much easier than some would think. For some reason whenever I hear “stuffed” in a recipe it makes me think “complicated” but that’s definitely not the case with this recipe.
It’s healthy and really tasty! Here are the ingredients to serve 2 people:
- 2 Laughing Cow Garlic and Herb Cheese portions
- 1/4 cup Chopped Almonds
- Pepper to taste
- 2 Chicken Breasts
That’s all! My mom also adds salt so if you like salt, also add that to taste.
Thaw out your chicken breasts and pre-heat the oven to 375. Chop up the almonds, open the cheese triangles, and mix them together with the amount of pepper you like. I just put a dash in for my recipe.
Place the pan into the oven and let them cook for 25 minutes.
While they are cooking I usually cook some brown rice but luckily Sunday night I had leftover rice I was able to just heat up! Then you’ll want to prep your veggie of choice. Mine is almost always broccoli. Even as a kid I loved to eat raw broccoli. It was just recently as an adult that I started to love steamed broccoli, but now I make it with almost every meal!
Finally, pull out the chicken and dish up! This is a meal that is so fast that I’m always surprised at how delicious it is. I love whipping up healthy meals that don’t take hours to prep and that guarantee me feeling full and satisfied.
